I love this smoothie for a couple of reasons. First of all, it’s cool and creamy and loaded with peanut butter and banana. Second, it makes a filling and healthy snack. Both the peanut butter and Greek yogurt contribute a lot of satisfying protein. This smoothie would be a great high-protein snack to enjoy after a challenging workout, or whenever you need a tasty energy boost.

I haven’t tried it yet, but I think a little chocolate syrup or some dark chocolate would be a great addition to this smoothie. We all know how well chocolate and peanut butter go together, as do peanut butter and banana, so chocolate, peanut butter, and banana? That can only be even better.

Peanut Butter Split Smoothie

Printable Recipe

Makes 1 serving

Ingredients:

  • 1 large banana, peeled, cut into 3 or 4 pieces, and frozen
  • 1/2 cup plain Greek yogurt
  • 1/2 cup milk
  • 1 1/2 tbsp. creamy peanut butter

Directions:

Place all ingredients in a blender and process until smooth. Serve immediately.

Green Monster Smoothie

Green Monster Smoothie

Looking at this smoothie, it’s hard to believe that you can’t taste the spinach in it. Three cups of spinach and you can’t taste it? No, you really can’t. Not even a little bit.

As I was making these, Julia watched me put the spinach in the blender and commented on the green color of the smoothie. She said, “No spinach for Julia,” and then drank her green smoothie without realizing that there was, in fact, spinach in hers too. :) (This trick does not work with peanut butter- even in cookies or muffins she tastes it right away and won’t eat any more.  Oh well.)

I have to admit I was skeptical at first, too, but after trying this Green Monster Smoothie I can’t wait to make it again and again.

Green Monster Smoothie

Printable Recipe

Makes 2-3 servings

Ingredients:

  • 1 banana (frozen or not), cut into chunks
  • 1 cup chopped frozen pineapple
  • 1 pear, coarsely chopped
  • 1 cup orange juice
  • 3 cups baby spinach leaves, rinsed and dried
  • 1 tbsp. honey
  • 3 tbsp. ground flaxseed (optional)

Directions:

  1. Combine all ingredients in a blender or food processor and puree until completely smooth. If smoothie is too thick, thin it out with a little more orange juice.
  2. Taste and adjust sweetness with additional honey, if desired. Serve immediately.

Iced Coffee

Iced Coffee

Are you as addicted to iced coffee this summer as I am? I find that every day, once I put Julia down for her nap, I crave a cold glass of iced coffee. It’s not even that I need the caffeine, as I usually try to stick to decaf in the afternoons. It’s the coffee flavor that I love, and on a hot summer day it’s got to be ice-cold. To avoid daily trips to my local coffee house (and save some money too!), I’ve finally found the perfect, easy, method for making iced coffee at home.

The secret to my iced coffee? Coffee ice cubes, so that even as they melt, my coffee doesn’t get watered down, plus plenty of milk too. Swirling some cold milk into slightly cooled, strong brewed coffee makes my iced coffee taste almost the same as an iced latte from my favorite coffee shop, and I don’t have to leave home to enjoy it.

Note: I plan ahead and make sure that I always have coffee ice cubes in my freezer. I just freeze cooled, leftover fresh brewed coffee in an ice cube tray, and then store the frozen ice cubes in a large zip-top baggie.

Makes 1 serving

Ingredients:

  • 1 cup (8 ounces) double strength brewed coffee
  • 1/2 cup (4 ounces) cold milk, or more to taste
  • coffee ice cubes

Directions:

  1. After brewing the double strength coffee, remove the lid from the coffee pot and let it cool for 15-30 minutes.
  2. Pour coffee into a 2-cup capacity glass, add milk, and add coffee ice cubes to fill. Enjoy immediately.

Blueberry Smoothie

Smoothies make a great breakfast, and since they’re portable you can blend one up and take it with you in the morning. I tend to make smoothies most often in the afternoon, though. They make a nutritious afternoon snack, filled with fruit, milk, and yogurt (which provide calcium and protein). Recently I’ve been adding some flaxseed as well for a little extra fiber and protein. I like to use frozen fruit in my smoothies. It’s convenient, and since it’s frozen, it thickens the smoothie, so that no ice is required.

The banana and yogurt make this smoothie incredibly creamy. It’s almost like you’re drinking a milkshake, but much healthier of course. When Julia wakes up from her afternoon nap, and I tell her we’re going to have a smoothie for a snack, her little face lights up. And mine does too. :)

Blueberry Smoothie

Makes 2 smoothies

Ingredients:

  • 1 cup frozen blueberries
  • 1 cup frozen strawberries
  • 1 banana
  • 3/4 cup plain yogurt (I used lowfat Greek yogurt)
  • 1/2 cup milk
  • 1 Tbsp. ground flaxseed

Directions:

Place all ingredients in a blender and process until smooth. Add milk to thin, if necessary. Serve immediately.
