Best of 2012: My Favorites

It’s hard to believe 2012 has come to an end. It was a year filled with lots of special memories, as our family of three grew to a family of four. We’ve enjoyed every moment of watching William grow and change over the past eight months. He’s going to be crawling any day now, and then we are in trouble. I just know he’s going to try to get into everything!

Julia has done plenty of growing up too, and I still cannot believe that my baby will be four in a few short months. She’s an independent little girl, who knows what she wants. Each night she tells me how many hugs and kisses she wants (60 is a favorite request), and instructs me whether they should be “mixed” or “first the hugs and then the kisses.”

While it’s been a bit of a challenge finding time to devote to blogging lately, it’s something that I really enjoy so I’m going to keep it up in the new year. Looking back on the recipes I shared in 2012, here are some of my favorites, in chronological order. Here’s to enjoying good food and quality time with those we love in 2013!

Baked Creamy Chicken Taquitos

Baked Creamy Chicken Taquitos: If there is one recipe that I discovered this year that we’ve made more than any other, this is it. We always have a supply of these in our freezer for easy weeknight meals. Be sure to make a double batch; it’s hardly any more work, and on those nights when you’re wondering what’s for dinner, you’ll be so glad you did.

New York Cheesecake

New York Cheesecake: This is the best recipe for the classic cheesecake. Drizzle it with some fresh strawberry sauce or just enjoy it as is.

Pizza with Portabellos, Spinach, and Goat Cheese: This year I’ve come to love both goat cheese and portabello mushrooms. Together they make this pizza a standout.

Roasted Zucchini Pasta with Grilled Chicken: That love of goat cheese I just mentioned? This pasta is another favorite way to enjoy it. Plus, you can’t go wrong with roasted vegetables.

Southwestern Grilled Chicken Salad with Black Bean Salsa: This main dish salad is full of flavor and makes a healthy, satisfying meal.

Brown Butter Cream Cheese Chocolate Chip Cookies: Nutty flecks of browned butter throughout a chocolate chip cookie? Yes, please. I’ve made these again and again, and again.

Spinoccoli Pizza: I love the combination of broccoli, spinach, and cheese on this pizza. You can’t understand how well this pizza works until you try it.

Rich, Fudgy Brownies: My go-to brownie recipe, and it’s not much harder to mix up than a box mix!

Shredded Chipotle Beef: This slow-cooker recipe is one of my favorite finds of 2012. The beef makes a great filling for tacos or enchiladas, and can even be made into a sandwich or taco salad.

Peanut Butter Split Smoothie: This smoothie is one of my favorite ways to refuel after a workout. Peanut butter, banana, Greek yogurt, and milk- all ingredients that you likely keep on hand. You can even add a splash of chocolate syrup if you want. (I won’t tell. :) )

Mexican Lasagna: A new take on the Italian classic, this Mexican Lasagna is super easy to put together. It’s another recipe that we’ve made again and again for easy weeknight dinners, and the leftovers taste even better the next day.

Fresh Strawberry Pie: I can’t wait to make this again once strawberry season arrives!

Strawberry Muffins: These are so good. The Greek yogurt in the batter makes these sweet little muffins irresistible.

Favorite Recipes of 2011

As we get ready to begin 2012, I thought I’d share a few of my favorite recipes that I’ve made over the past year. I always have such a hard time narrowing down my favorites, but these are the recipes that we enjoyed so much that I will make them again and again (and in most cases I already have). I hope you’ll find something that inspires you to spend some time in your kitchen in 2012!

Nutty Granola: I’ve made this granola more times than I can count, and it’s always a treat to have some for breakfast. Slightly sweetened with maple syrup and filled with nuts and oats, this granola is the best.

Waffles of Insane Greatness: Easy to prepare, this recipe is my favorite whenever I want waffles for breakfast.

Everyday Cinnamon Rolls: When a cinnamon roll craving hits but you don’t want to spend too much time baking (and waiting!), these everyday cinnamon rolls are the perfect solution. Warm and gooey, and filled with cinnamon flavor, these cinnamon rolls are made with less butter and part whole wheat flour, so you don’t have to feel too guilty about eating them.

Fish Tacos with Mango Slaw: Deliciously seasoned fish is wrapped in a tortilla with crunchy mango slaw and creamy avocado. So good.

Vegetable Enchiladas: These enchiladas are healthy and full of vegetables, black beans, and cheese.

Restaurant Style Salsa: The only problem with this salsa is that after making it, you’ll have a really hard time eating the jarred kind again. That’s ok, though, because this homemade salsa can be made in a matter of minutes.

Peanut Butter Chocolate Chip Muffins: This may be my new favorite muffin recipe. The combination of peanut butter and chocolate is just right in these muffins.

Vanilla Bean Cupcakes with Raspberry Filling: Delicious vanilla bean cake with a surprise raspberry filling.

Black Bean Burgers: These vegetarian burgers have so much flavor that once you try them, you’ll make them again and again.

Whole Wheat Blueberry Pancakes: Delicious made with either fresh or frozen blueberries, these pancakes are my go-to recipe.

Grilled Chicken Fajitas: An amazing marinade makes these fajitas something special. Add in grilled peppers and onions and whatever other toppings you like, and you have a great meal.

Golden Winter Soup: Butternut squash, potato, and leeks with a touch of cream. Served with a green salad and some rolls or Gruyere toasts, this soup is the perfect fall or winter dish.

Top 10 of 2010: Desserts & Baked Goods

Yesterday I posted my ten favorite main dishes and sides of the year. Today I’m sharing my absolute favorites of the desserts and baked goods that I’ve made. It was a challenge to choose just ten because I have loved every recipe that I’ve posted, but here are ten of the best.

Chocolate Chip Cookie Cupcakes & Cookie Dough Frosting: These cupcakes are heavenly and it is amazing how much the frosting tastes like chocolate chip cookie dough.

Thick and Chewy Chocolate Chip Cookies: I am so glad that I found this recipe this year, as these are the best chocolate chip cookies ever. If you’ve never tried them, they should be on your must-bake list for 2011.

Chocolate Banana Bread: An all-time favorite of mine, I love how the chocolate and banana flavors complement each other. For an extra-decadent treat, top this quick bread with a smear of peanut butter.

Lemon Blueberry Cheesecake Bars: Cheesecake is one of my favorite desserts, and these bars have an amazing cheesecake flavor. Blueberries are a delicious topping, as would be raspberries or strawberries.

Dark Chocolate Truffle Caramel Swirl Ice Cream: I have had so much fun experimenting with my new ice cream maker this year. To create this ice cream, I made a vanilla ice cream base, mixed in dark chocolate truffles, and added a caramel swirl. Brad and I both agreed that it is some of the best ice cream we’ve ever had.

Pumpkin Oatmeal Cookies: With oatmeal, pumpkin, cranberries, and white chocolate chips, these cookies are moist and chewy with just the right amount of spice.

Dulce de Leche Cheesecake Squares: This was a recipe that I knew I had to make as soon as I first saw it. I cannot think of a combination more irresistible than cheesecake, caramel, and chocolate.

Sugar-Topped Molasses Spice Cookies: As these cookies bake in the oven, they make your kitchen smell amazing- warm, sweet, and spicy. I’ve always enjoyed a good gingersnap cookie, and these molasses spice cookies are even better because they remain a bit soft and chewy while having just the right amount of spice.

Cranberry Scones: These scones are light and buttery, with a subtle sweetness that perfectly balances the tartness of fresh cranberries. Cranberry scones are a special treat with your morning cup of coffee or tea.

Double Chocolate Walnut Biscotti: This is my all-time favorite biscotti recipe. Dipped in a cup of coffee or eaten just as they are, they are so good.

Top 10 of 2010:  Main Dishes & Sides

As we get ready to welcome 2011, there are a few recipes that I’ve posted in the past year that I’d like to highlight once again. These are the recipes that are family favorites, the ones that are so good that I will make them over and over again. I tried to choose just 10 recipes, but there were so many that I love that I decided to choose my top 10 favorite main dishes and sides, and my top 10 desserts and baked goods. I’ll post the top 10 desserts and baked goods tomorrow. Here are my favorite main dishes and sides of the year; I hope I can inspire you to try a new recipe in your kitchen!

Chicken Tacos with Cucumber-Avocado Salsa: I discovered this taco recipe this year, and I think it’s safe to say they are the best tacos I’ve ever had. I love the way the salsa brightens up the flavor of the tacos, and they have just the right amount of spice. The cucumber-avocado salsa works great with steak tacos as well.

Romaine Salad with Chicken, Cheddar, Apple, and Pecans: I’ve been making this salad for a number of years, and it never disappoints. If you’re skeptical about eating a salad for dinner, this is the recipe for you. Between the chicken, cheddar, apples, and pecans, this is one filling meal. Whether you top your salad with the homemade cranberry vinaigrette, or your favorite store-bought dressing, this salad is a winner.

Zucchini Sub Sandwiches: These sandwiches are one of my family’s all-time favorite meat-free meals. They are super simple to make and the flavors please adults and kids alike. While my family likes these best with grilled zucchini, other grilled vegetables, such as eggplant or portabella mushrooms, would be delicious as well.

Sweet Potato Fries: I make these at least every other week, and a home-cooked burger just isn’t the same without these fries on the side. The sweet potatoes are tossed with a little olive oil and a mixture of spices before being baked in the oven. These sweet potato fries couldn’t be easier, and are good for you too!

Open-face Steak Sandwiches with Herbed Goat Cheese and Tomatoes: This is one of those meals that looks really fancy, but is so easy to make. This open-face sandwich is the perfect way to turn leftover grilled steak into an amazing meal. Thick slices of bread, tangy herbed goat cheese, juicy tomato, salty Parmesan, need I say more? I can’t wait until summer, when the tomatoes will be juicy and delicious again, so that I can make this sandwich.

Pasta with Mini Turkey Meatballs: This delicious pasta dish includes some of the best meatballs I’ve tasted. I like the flavor and healthfulness of the turkey meatballs, but you could easily substitute beef or ground chicken. The pasta is tossed with a simple tomato sauce, cubes of mozzarella cheese, and fresh basil.

Pitas with Chicken and Tzatziki Sauce: I love how the flavors of this meal come together. Garlic lemon-flavored chicken, yogurt-based Tzatziki sauce, red onion, and tomatoes are delicious wrapped up in whole wheat or white pita bread.

Pear, Gorgonzola & Walnut Pizza: This is my all-time favorite homemade pizza. While they’re not traditional pizza toppings, pear slices, Gorgonzola cheese, and walnuts are an amazing combination atop homemade pizza dough. If you haven’t tried this pizza, it should definitely be on your list of recipes to try in 2011.

Sweet Potato Pecan Casserole: When I set out to try this recipe, I had no idea how good it would really be. I’ve made this casserole at least 3 times in the past month, and the flavors are outstanding. Each time I serve it, it is met with rave reviews. This casserole is a delicious and much healthier version of a traditional sweet potato casserole (and it turned out to be my top post of 2010!)

Carrot-Ginger Soup: This soup combines carrots, onion, ginger, chicken broth, butter, and half n half, and turns them into something wonderful. I’ve made this soup many, many times, and it’s perfect as a main course for a light dinner, as a first course, or as a warm lunch on a cold day.
