This recipe is one of the very first that I shared after starting this blog- over four years ago now. It had gotten lost in the archives and desperately needed a little updating and a new photo. This is one of our favorite meals to make during grilling season, and a friend recently found the recipe on my site and reminded me of it. While we used to make these tacos all the time, I had forgotten about them. Well, now that I’ve been reminded, we’ve made these three times in the span of two weeks.

There is so much to love about this recipe. The marinade for the chicken is simple, just lime juice, garlic, and red pepper flakes. The salsa is full of fresh ingredients: cucumber provides a cool crunch, red onion and jalapeno give a little kick, avocado adds creaminess, and cilantro and lime juice bring even more flavor. These Chicken Tacos with Cucumber-Avocado Salsa are proof that simple food made with real ingredients really is the best.

Chicken Tacos with Cucumber-Avocado Salsa

Makes 6 servings

Ingredients:

For the marinade:

  • ¼ cup plus 2 tbsp. lime juice (from 2 or 3 limes)

  • 2 cloves garlic, minced

  • ¼ tsp. red pepper flakes, or to taste

  • 4 boneless, skinless chicken breast halves

  • Salt and pepper

For the cucumber-avocado salsa:

  • 1 large cucumber, seeded and diced (about 2 cups)

  • ½ small red onion, finely chopped

  • 1 jalapeno pepper, seeded and finely chopped

  • ¼ cup chopped fresh cilantro

  • 2 medium firm-ripe avocados, peeled, pitted, and diced

  • juice of 2 limes (about ¼ cup)

  • Salt, to taste

Other ingredients:

  • 12 corn tortillas, warmed

  • 15 oz. can black beans, rinsed, drained, and warmed

  • Greek yogurt, if desired

Directions:

  1. Marinate the chicken: Combine lime juice, garlic, and red pepper flakes in a zip-top plastic bag. Season chicken with salt and pepper and add to bag. Marinate in refrigerator for 1 hour, turning bag occasionally.

  2. Grill the chicken: Grill chicken over medium-high heat until cooked through. Let rest for 5-10 minutes before slicing.

  3. Meanwhile, prepare the salsa: Combine all salsa ingredients in a medium bowl. Stir gently to evenly combine.

  4. To serve, top tortillas with chicken, salsa, black beans, and Greek yogurt, if desired.
