Cherry Almond Quinoa Granola

Made with red quinoa, this Cherry Almond Quinoa Granola is super crunchy and filled with cherries and almonds! Almond extract gives it even more almond flavor.
  • 5 cups (425g) old-fashioned oats
  • ¾ cup (140g) quinoa, rinsed and drained
  • 1 cup (85g) raw sliced almonds
  • ¼ cup (25g) flaxseed
  • ½ tsp. cinnamon
  • ½ tsp. Kosher salt
  • 3 tbsp. coconut oil (or olive oil)
  • ½ cup pure maple syrup
  • 2 tbsp. honey
  • 2 tsp. almond extract
  • ½ tsp. vanilla extract
  • 1 cup (120g) dried cherries
  1. Preheat oven to 300 degrees F.
  2. In a large bowl, combine oats, quinoa, almonds, flaxseed, cinnamon, and salt. Stir to mix well.
  3. Place coconut oil in a heat-safe liquid measuring cup or bowl. Heat in the microwave until melted, about 30 seconds. Whisk in maple syrup, honey, almond extract, and vanilla. Pour over oat mixture and stir until everything is evenly coated.
  4. Spread granola in an even layer on a rimmed baking sheet. Bake, stirring every 10-15 minutes, until granola is lightly browned, 40-45 minutes total.
  5. Let granola cool completely on baking sheet. Mix in dried cherries. Store in an airtight container at room temperature or in the refrigerator for up to two weeks.
