Strawberry Chicken Salad with Warm Citrus Dressing

This salad is a light and tasty dinner, especially when the weather warms up in spring and summer. It is also a great way to use up strawberries, as I always need to when I buy a large container of them at Costco or the farmers’ market. The dressing is easy to make in a food processor, and then is quickly warmed on the stove for a few minutes.

The method that I use for cooking the chicken is one that I often use when I need cooked chicken breasts for a salad, pasta, or casserole. First, I brown one side of the chicken in a skillet with a small amount of olive oil. Then I flip the chicken over to brown the second side. Finally I add enough water so that there is about half an inch of water in the pan, cover it, and simmer until the chicken is cooked through. This method is great because it prevents the chicken from becoming dry while it finishes cooking.

Strawberry Chicken Salad with Warm Citrus Dressing

Salad Ingredients:

  • 4 medium skinless, boneless, chicken breast halves
  • olive oil
  • Ground black pepper & salt
  • 6 cups torn fresh spinach and/or other salad greens
  • 2 cups strawberries
  • 1/4 cup chopped walnuts, toasted (I actually forgot to toast them and the salad still tasted delicious)
  • 1 avocado, chopped
  • 1 recipe Warm Citrus Dressing

Warm Citrus Dressing:

  • 1/2 cup strawberries
  • 1/3 cup orange juice
  • 2 Tbsp. olive oil
  • 1 Tbsp. lemon juice
  • 1 tsp. sugar
  • 1/2 tsp. chili powder
  • 1/4 tsp. ground black pepper
  • 2 tsp. grated lemon peel
  • 1/4 tsp. salt


  1. Sprinkle chicken breast halves lightly with salt & pepper. Heat a small amount of olive oil in a skillet. Add the chicken. When the first side is brown, flip the chicken and brown the second side. Then add water so that it comes partway up the sides of the chicken (about 1/2 inch deep). Continue cooking chicken until cooked through. Remove from heat and set aside.
  2. Prepare the Warm Citrus Dressing by combining all ingredients in a food processor and blending utnil smooth. Transfer to a small saucepan and bring to just boiling. Simmer, uncovered, for 3-5 minutes, stirring occasionally. Keep warm until needed.
  3. Thinly slice the chicken. Arrange the salad greens, chicken, strawberries, walnuts, and avocado on serving plates. Drizzle with the Warm Citrus Dressing.

Makes 4 servings. (I halved the recipe to make 2 servings, but still made a whole recipe of dressing.)
