These Whole Grain Fruit Bars are my latest addiction. I love how easy they are to make. I love that they are whole grain and contain only recognizable ingredients. I love that these fruit bars can pass for both a snack or healthy dessert. In my efforts to pack nutritious lunches made from real foods for both myself and my kids, I’ve been making up a batch of these every few weeks. They make a great lunchbox addition or after-school snack, paired with a cold glass of milk of course.

You know those fruit-filled cereal bars that you can buy at the store? These are kind of like those, only so much better. Actually, the two don’t even compare because these are homemade, made from real ingredients, and taste about a million times better. You can use whichever flavor of preserves you want in these, and I like to switch up the flavor each time I make these. My favorites so far are raspberry and blueberry.

These Whole Grain Fruit Bars are a little something sweet to add to our lunchboxes, without the worry about processed ingredients. I’m betting that you can make these for far less than the cost of buying them at the store, too.

Speaking of lunchboxes, I’m looking for a new one for Julia. I’m thinking about going the bento box route, to cut down on our use of plastic baggies and other packaging. Do you have any good lunchbox recommendations? I’m considering this one.  Has anyone tried it?

Whole Grain Fruit Bars

Homemade Whole Grain Fruit Bars are the perfect treat to add to your lunchbox. Made with real ingredients, kids and adults alike will love these bars!

Makes 16 bars

Ingredients:

  • 1 ½ cups whole-wheat flour
  • 1 ½ cups old-fashioned rolled oats
  • 1/3 cup packed brown sugar (use ½ cup if you want your bars a little sweeter)
  • ½ tsp. salt
  • 10 tbsp. (1 ¼ sticks) cold, unsalted butter, cut into ½-inch cubes
  • 3 tbsp. cold water
  • ¾ cup fruit preserves

Directions:

  1. Preheat oven to 350 degrees F.
  2. Spray a 13×9-inch baking dish with cooking spray, line it with parchment paper, and spray the parchment.
  3. Place the whole-wheat flour, oats, brown sugar, and salt in the bowl of a food processor. Pulse for 30 seconds.
  4. Add the butter and water and pulse until the dough holds together when pressed.
  5. Press half of the dough into the prepared baking pan. Use your hand to press it down evenly. Spread the preserves in an even layer on top of the dough. Sprinkle the remaining dough on top of the preserves and use your hand to press it down.
  6. Bake for 45 minutes, or until lightly golden.
  7. Cool completely and then cut into 1 ½ x 4-inch bars.
  8. Bars can be stored at room temperature for up to 3 days or in the refrigerator for up to a week.
