These Blender Green Smoothie Waffles are a fun way to get kids to eat their greens! The waffle batter is mixed up in a blender... so easy and clean up is quick, too!
Add spinach, bananas, strawberries, milk, Greek yogurt, maple syrup and vanilla to a blender (I recommend using a high powered blender. I use and love my Vitamix - affiliate link) Blend until smooth.
Add the eggs, melted coconut oil, flaxseed, baking powder and salt to the blender. Blend until just combined.
Add the white whole wheat flour and all purpose flour to the blender and blend for a few seconds until just combined. Do not over-blend.
Let the batter rest while the waffle maker heats up.
Cook waffles in a waffle maker according to manufacturer’s instructions. Mine take about 6-7 minutes per waffle, but the cook time will vary with different waffle makers. Waffles are done when there is very little steam left escaping from the sides of the waffle maker.
Serve waffles immediately or keep warm in a 200 degree oven while you cook the rest of the waffles.
