These Blender Green Smoothie Waffles are a fun way to get kids to eat their greens! The waffle batter is mixed up in a blender so they are really easy to make. The waffles turn out crisp on the outside with soft insides. The waffles have a hint of green smoothie flavor, with a little coconut and banana mixed in!

Ingredients

  • 1 ½ cups fresh spinach packed (1 ½ ounces)
  • 2 medium very ripe bananas
  • 4 medium strawberries (or 2 ounces frozen strawberries)
  • 1 ½ cups milk I used whole milk
  • ½ cup plain Greek yogurt
  • ¼ cup pure maple syrup or honey
  • 1 teaspoon vanilla extract
  • 2 eggs
  • ¼ cup coconut oil melted
  • 2 tablespoons ground flaxseed
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 cup white whole wheat flour
  • ¾ cup all purpose flour

Instructions

  • Add spinach, bananas, strawberries, milk, Greek yogurt, maple syrup and vanilla to a blender (I recommend using a high powered blender. I use and love my Vitamix - affiliate link) Blend until smooth.
  • Add the eggs, melted coconut oil, flaxseed, baking powder and salt to the blender. Blend until just combined.
  • Add the white whole wheat flour and all purpose flour to the blender and blend for a few seconds until just combined. Do not over-blend.
  • Let the batter rest while the waffle maker heats up.
  • Cook waffles in a waffle maker according to manufacturer’s instructions. Mine take about 6-7 minutes per waffle, but the cook time will vary with different waffle makers. Waffles are done when there is very little steam left escaping from the sides of the waffle maker.
  • Serve waffles immediately or keep warm in a 200 degree oven while you cook the rest of the waffles.
