This Strawberry Avocado Kale Salad is packed with flavors and textures! Strawberries, creamy avocado, toasty walnuts, tangy feta, and a honey-lemon vinaigrette will make this sweet kale salad your new favorite!

Ingredients

For the Vinaigrette:

  • 2 tablespoons lemon juice you will need an additional 2 teaspoons for the kale
  • 2 tablespoons white wine vinegar
  • 1 ½ tablespoons honey
  • ¼ cup extra virgin olive oil
  • salt and pepper

For the Salad:

  • 1 large bunch kale about 8 cups
  • 2 teaspoons lemon juice
  • 1 ½ cups sliced strawberries
  • 1 large avocado chopped into bite-size pieces
  • ¾ cup walnuts toasted and coarsely chopped
  • ½ cup feta cheese

Instructions

Make the Vinaigrette:

  • Combine all ingredients in a small bowl or jar. Whisk or shake until well combined. Set aside.

Make the Salad:

  • Cut kale leaves off of stalks; discard stalks. Chop leaves into strips and wash thoroughly in a bowl of cold water. Dry kale and place in a large bowl.
  • Pour 2 teaspoons lemon juice over kale and massage with your hands for about 1 minute to slightly soften kale.
  • Pour vinaigrette over kale (you might not need it all – save the leftovers in a sealed jar in your refrigerator for salads later in the week), and toss until evenly coated. Add strawberries, avocado, walnuts, and feta to the salad and toss to combine. Serve immediately.

Notes

If you prefer softer kale, allow the kale to marinate in the salad dressing in the refrigerator for a few hours before adding other ingredients and serving.
