Ingredients
For the Vinaigrette:
2tablespoonslemon juiceyou will need an additional 2 teaspoons for the kale
2tablespoonswhite wine vinegar
1 ½tablespoonshoney
¼cupextra virgin olive oil
salt and pepper
For the Salad:
1large bunch kaleabout 8 cups
2teaspoonslemon juice
1 ½cupssliced strawberries
1large avocadochopped into bite-size pieces
¾cupwalnutstoasted and coarsely chopped
½cupfeta cheese
Instructions
Make the Vinaigrette:
Combine all ingredients in a small bowl or jar. Whisk or shake until well combined. Set aside.
Make the Salad:
Cut kale leaves off of stalks; discard stalks. Chop leaves into strips and wash thoroughly in a bowl of cold water. Dry kale and place in a large bowl.
Pour 2 teaspoons lemon juice over kale and massage with your hands for about 1 minute to slightly soften kale.
Pour vinaigrette over kale (you might not need it all – save the leftovers in a sealed jar in your refrigerator for salads later in the week), and toss until evenly coated. Add strawberries, avocado, walnuts, and feta to the salad and toss to combine. Serve immediately.
Notes
If you prefer softer kale, allow the kale to marinate in the salad dressing in the refrigerator for a few hours before adding other ingredients and serving.
