A sweet summer appetizer, this refreshing bruschetta with strawberries, fresh ricotta cheese, and a drizzle of honey is perfect for brunch or a summer party.

- 1 baguette
- 2 tbsp olive oil
- 1 1/2 cups strawberries chopped small
- 1/4 cup fresh basil sliced into small ribbons
- 1 cup ricotta cheese
- 2 tbsp honey for drizzling
Preheat broiler. Slice the baguette on a slight diagonal into 1/2-inch thick ovals. Place slices on a baking sheet and lightly brush with olive oil. Broil until lightly golden, about 2 minutes.
In a small bowl, gently toss together the strawberries and basil.
Spread about a tablespoon of ricotta cheese on each toasted baguette slice. Top with a spoonful of strawberries and basil. Drizzle with a small amount of honey.
