Ingredients

For the Pork

  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • ½ teaspoon garlic powder
  • ½ teaspoon salt use ¼ teaspoon if you prefer less salt
  • ½ teaspoon black pepper
  • 1 pound pork tenderloin
  • 1 tablespoon olive oil

For the Sauce

  • 3 cloves garlic minced
  • 2 tablespoons honey
  • 1 tablespoon low sodium soy sauce
  • 2 teaspoons Dijon mustard

Instructions

  • Preheat oven to 400° F.
  • In a small bowl, combine the paprika, dried thyme, garlic powder, salt and pepper. Stir to mix.
  • Pat the pork tenderloin dry and trim off the silver skin. Rub the spice mixture over all sides of the pork.
  • Heat the olive oil in an oven-safe skillet* (I used a cast iron skillet) over medium-high heat. Once hot, add the pork tenderloin to the pan and brown on all sides, 1-2 minutes per side.
  • Meanwhile, in a small bowl, whisk together the sauce ingredients: garlic, honey, soy sauce and Dijon mustard.
  • Transfer the skillet with the pork to the preheated oven and bake for 18 minutes. Then brush or pour the sauce evenly over the pork. Continue baking for 2-7 more minutes, until the internal temperature of the thickest part of the meat registers at least 145° F.* (The total cook time in the oven for the pork tenderloin will be about 20-25 minutes.)
  • Let the pork rest for 5 minutes before slicing and serving.

Notes

  • If you don't have an oven-safe skillet, you can transfer the pork to a sheet pan or baking dish after browning it in a pan on the stove.
  • If you prefer your pork more well done, you can cook it to 155° F.
