For the Pork
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- ½ teaspoon garlic powder
- ½ teaspoon salt use ¼ teaspoon if you prefer less salt
- ½ teaspoon black pepper
- 1 pound pork tenderloin
- 1 tablespoon olive oil
For the Sauce
- 3 cloves garlic minced
- 2 tablespoons honey
- 1 tablespoon low sodium soy sauce
- 2 teaspoons Dijon mustard
Preheat oven to 400° F.
In a small bowl, combine the paprika, dried thyme, garlic powder, salt and pepper. Stir to mix.
Pat the pork tenderloin dry and trim off the silver skin. Rub the spice mixture over all sides of the pork.
Heat the olive oil in an oven-safe skillet* (I used a cast iron skillet) over medium-high heat. Once hot, add the pork tenderloin to the pan and brown on all sides, 1-2 minutes per side.
Meanwhile, in a small bowl, whisk together the sauce ingredients: garlic, honey, soy sauce and Dijon mustard.
Transfer the skillet with the pork to the preheated oven and bake for 18 minutes. Then brush or pour the sauce evenly over the pork. Continue baking for 2-7 more minutes, until the internal temperature of the thickest part of the meat registers at least 145° F.* (The total cook time in the oven for the pork tenderloin will be about 20-25 minutes.)
Let the pork rest for 5 minutes before slicing and serving.
- If you don't have an oven-safe skillet, you can transfer the pork to a sheet pan or baking dish after browning it in a pan on the stove.
- If you prefer your pork more well done, you can cook it to 155° F.
