This refreshing Watermelon Salad is an irresistible combination of sweet and savory flavors. Serve it at your next summer BBQ and it will be the hit of the meal!

For the Dressing
- zest of 2 limes
- 3 tablespoons fresh lime juice
- 3 tablespoons olive oil
- 2 teaspoons honey
- ¼ teaspoon Kosher salt
- freshly ground black pepper to taste
For the Salad
- 6 cups cubed watermelon* ¾-inch cubes
- ½ English cucumber quartered lengthwise and sliced ¼-inch thick
- ½ cup thinly sliced red onion
- 1 ½ cups cherry or grape tomatoes halved, 6-8 ounces
- 4 cups baby arugula about 3 ounces
- ½ cup crumbled feta cheese
Make the dressing by combining the lime zest, lime juice, olive oil, honey, Kosher salt and black pepper in a small bowl. Whisk until well mixed.
To make the salad, place the cubed watermelon, chopped cucumber, sliced red onion, halved tomatoes and baby arugula in a large bowl.
Pour the dressing over the salad and toss gently to combine.
Add the feta cheese and toss gently to incorporate. Serve immediately.
- This salad is best if the watermelon is chilled in the refrigerator before making and serving the salad.
