Crock Pot Baked Potatoes

These Crock Pot Baked Potatoes are an easy way to make perfect fluffy baked potatoes! You'll love these when you need a make ahead option for dinner. You can serve the baked potatoes straight from the slow cooker, or put them under the broiler to crisp the skins before serving.

Ingredients

  • 4 russet potatoes
  • 1 tablespoon olive oil
  • salt to taste
  • black pepper to taste

Instructions

  • Scrub the potatoes and dry them well. Poke each potato a few times with a fork.
  • Rub olive oil over the potatoes and sprinkle all sides of potatoes with salt and pepper. Place potatoes in the slow cooker.
  • Cover and cook on high for 4-5 hours or low for 8-10 hours, until potatoes are tender in the center when pierced with a fork.*

Optional, to crisp the skins:

  • Place the baked potatoes on baking sheet (line with foil if desired, but not parchment since you cannot place parchment paper under the broiler).
  • Place under the broiler in the oven for 3-7 minutes, until skins begin to get golden and crisp. Watch the potatoes closely so they don't burn.

Notes

  • The cook time in this recipe is for medium or medium/large russet potatoes. Small potatoes will cook faster and extra large potatoes will need more time.
  • About 6 medium-large russet potatoes will fit in a 5-6 quart slow cooker.
