Air Fryer Zucchini

Air Fryer Zucchini is an easy side dish. Italian seasoning and Parmesan cheese bring lots of flavor to this healthy air fryer recipe.

Ingredients

  • 2 medium zucchini
  • 1 tablespoon olive oil
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon Kosher salt or to taste
  • black pepper to taste
  • 1-2 tablespoons grated Parmesan cheese

Instructions

  • Preheat the air fryer to 400° F for 5 minutes.
  • Meanwhile, prep the zucchini. Slice off the stem and base ends. Quarter the zucchini lengthwise and then cut it into ½-inch pieces. Place in a medium bowl.
  • Drizzle the olive oil over the zucchini. Sprinkle on the Italian seasoning, salt and pepper. Toss to coat.
  • Put zucchini in the air fryer basket in a single layer (cook in 2 batches or as needed). Air fry at 400° F for 6-8 minutes total, until zucchini is tender, shaking the basket to flip the zucchini after 5 minutes.
  • Sprinkle the Parmesan cheese over the zucchini while it is hot and serve.
