Ingredients

  • 8 carrots
  • 1 tablespoon olive oil
  • ½ teaspoon paprika
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  • Preheat oven to 425° F.
  • Cut carrots into 1-inch slices on the diagonal and place on a rimmed baking sheet.
  • Whisk together olive oil, paprika, salt and pepper in a small bowl. Pour over carrots and toss to coat.
  • Roast carrots in the oven for 20 to 25 minutes, stirring after 10 minutes, until crisp-tender. Serve.
