Sheet Pan Sausage and Roasted Veggies (Plus Meal Prep Option)

Get dinner on your table with little effort with this 6 ingredient Sheet Pan Sausage and Roasted Veggies! This recipe is also good for meal prep lunches. Serve the sausage and veggies with quinoa, rice or bread and use up any vegetables that you have in your kitchen!

  • 1 pound broccoli cut into florets
  • 4 cups peeled and chopped sweet potatoes
  • 1 tablespoon olive oil
  • salt and pepper
  • 4 Italian chicken sausages


  • Preheat oven to 400 degrees F.
  • Place broccoli and sweet potatoes on a rimmed sheet pan. Drizzle with olive oil and sprinkle with salt and pepper. Toss to coat.
  • Place sausages in between the pieces of broccoli and sweet potatoes.
  • Bake for 30 minutes, or until sausages are cooked through. (They should register at least 165 degrees F. on an instant-read thermometer.)
  • Slice sausages, if desired. Serve with quinoa, rice or bread.


This sheet pan recipe is also good for meal prep. After cooking, divide the sausage, broccoli and sweet potatoes into meal prep containers and store in the refrigerator for up to 3 days. Add quinoa or rice to the containers if desired.
