Scrub the potatoes, leaving the skins on. Cut the potatoes into wedges. To do this, first cut the potatoes in half lengthwise. Then cut each half into wedges.
Place the potato wedges in a bowl of cold water and soak for 15-20 minutes.
Remove the potatoes from the water and dry them very well. Wash and dry the soaking bowl and place the potatoes back in the bowl.
Preheat the air fryer to 400° F for 5 minutes.
While the air fryer preheats, drizzle the olive oil over the potatoes and sprinkle on the garlic powder, onion powder, smoked paprika, salt and pepper. Toss to mix very well, so that the potatoes are evenly coated with the oil and seasonings.
Place potatoes in the air fryer basket and arrange them in a single layer in the basket (you will probably have to air fry in two batches to fit all of the potatoes in a single layer).
Air fry at 400° F for 18-22 minutes, until potatoes are tender inside and crispy on the edges. Shake the basket to toss the potato wedges after the first 10 minutes of cook time, and then every 5 minutes after that. This helps them to cook and crisp evenly.
Sprinkle grated Parmesan cheese over the potatoes, if desired, and serve immediately.
