These Cheese Pizza Bites are a healthy lunch or snack for kids. Serve them with pizza sauce for dipping! This easy cheese pizza bites recipe is made with a quick no rise whole wheat pizza dough and mozzarella cheese.
Combine warm water, yeast and honey in the bowl of a stand mixer. Gently stir to mix. (Alternatively, the dough can be mixed and kneaded by hand.)
Let stand 5 minutes.
Meanwhile, preheat oven to 400 degrees F. Grease a mini muffin pan with olive oil or spray with cooking spray.
Add the olive oil, white whole wheat flour, Italian seasoning and salt to the mixing bowl. Use the paddle attachment to mix until well combined. Switch to the dough hook and knead for 5-8 minutes, until dough is smooth and elastic.
Transfer the dough to a lightly floured work surface and knead it by hand a few times. Shape the dough into a ball and then cut the dough into 24 equal pieces. (You can do this by cutting the dough into eight equal pieces and then each of the eighths into thirds.)
Roll each piece into a ball and then flatten it into a disk. Set each of the disks into the mini muffin cup wells, forming them into the muffin cup shape.
Sprinkle each piece of dough with shredded mozzarella.
Bake for 10-12 minutes, until cheese is lightly browned.
Serve warm pizza bites with pizza sauce, if desired.
