Lemon Garlic Baked Salmon

This baked salmon is brushed with lemon garlic butter and then baked until it's tender, moist and flaky. Serve it with mashed potatoes and green beans for a delicious family dinner!

Ingredients

  • 4 salmon fillets about 6 ounces each, skin on
  • 1 tablespoon melted butter
  • 1 tablespoon olive oil
  • zest of 1 medium lemon
  • juice of half a medium lemon
  • 3 cloves garlic minced
  • ½ teaspoon kosher salt or ¼ teaspoon table salt
  • ground black pepper to taste
  • chopped fresh herbs such as dill, parsley, thyme or chives, for serving

Instructions

  • Preheat oven to 425° F. Line a 9x13-inch baking dish with a sheet of parchment paper (for easy clean up). Place the salmon fillets in the baking dish and pat dry with paper towels. Set aside to allow the salmon to come to room temperature for about 15 minutes.
  • Meanwhile, in a small bowl whisk together the melted butter, olive oil, lemon zest, lemon juice, garlic, salt and pepper. Brush the mixture over the tops and sides of the salmon fillets.
  • Bake for 12-20 minutes, or until the salmon is cooked to your liking. (Thicker pieces of salmon may take longer.) When it's done, the salmon should flake easily with a fork. (The USDA recommends an internal temperature of 145° F for salmon, but some prefer it cooked to 125-130° F, then rest for 3 minutes before serving.)
  • Sprinkle with the chopped fresh herbs and serve.
