Ingredients

Seasoning Rub

  • 2 tablespoons brown sugar
  • 2 teaspoons paprika sweet or smoked*
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • ½ teaspoon onion powder
  • 1 teaspoon salt
  • ¼ teaspoon black pepper

Remaining Ingredients

  • 4 bone-in pork chops about 1 to 1¼ inches thick
  • 3 tablespoons butter

Instructions

  • Let pork chops come to room temperature for 20 minutes. Meanwhile, preheat oven to 425° F. Line a rimmed baking sheet with parchment paper.

  • Combine all seasoning rub ingredients (brown sugar, paprika, chili powder, garlic powder, dried thyme, onion powder, salt and black pepper) in a small bowl. Whisk or stir until well blended.

  • Rub seasonings over all sides of pork chops and place on the prepared baking sheet. Cut the butter into 4 thin "pats" and place one pat of butter on top of each pork chop.

  • Bake for 18-25 minutes, until an instant read thermometer inserted into the thickest part of the pork chops not touching the bone registers 145° F. The cook time will depend on the thickness of the pork chops. Be careful not to overcook the pork chops or they may dry out.
  • Let pork chops rest for 5 minutes and then serve.
