- 1.5 pounds sirloin steak or beef tenderloin, cut into 1-inch cubes

Combine all marinade ingredients in a zip-top plastic bag or bowl. Whisk or squish the bag to mix.
¼ cup low sodium soy sauce, ¼ cup olive oil, 2 teaspoons Dijon mustard, 2 teaspoons Worcestershire sauce, 4 cloves garlic, ½ teaspoon salt, ¼ teaspoon black pepper
Add the steak tips to the bowl or bag and coat with the marinade. Cover the bowl or seal the bag and marinate in the refrigerator for at least 30 minutes and up to 6 hours.

During the last 15 minutes of the marinating time: Let steak come to room temperature for 15 minutes before cooking.
Heat 1 tablespoon of olive oil or avocado oil in a large heavy skillet, such as a cast iron skillet, over medium-high heat. Once hot, add the steak tips in a single layer in the pan, and discard the used marinade. (Cook in batches or in two pans as needed.) Let the steak tips sear without moving them for 2-3 minutes. Flip and cook on the other side for 2-3 minutes, then flip again and cook for 2-3 minutes more, until they reach your desired doneness.

- I find that medium to medium-well is best for steak tips with the best balance of flavor and tenderness. Aim to cook them to 135-150° F in the center, as measured with an instant read thermometer.
- Nutrition estimate assumes all marinade will be consumed, which it won't be.
