Easy Bruschetta Recipe

This bruschetta is one of my favorite appetizers to bring to a party! It features toasted baguette slices with a fresh tomato and basil topping. I like to set out the toasts alongside a bowl of the tomato topping so guests can spoon it on themselves, keeping the bread perfectly crunchy until the last bite.

Ingredients

For the Tomato Topping:

  • 6 ripe Roma tomatoes
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons good-quality balsamic vinegar
  • 2 cloves garlic minced
  • ¼ teaspoon fine sea salt
  • a few grinds of freshly ground black pepper
  • cup thinly sliced fresh basil leaves

For the Toasted Bread:

  • 1 baguette
  • 1-2 tablespoons extra virgin olive oil
  • 1 clove garlic

Instructions

Make the Tomato Topping:

  • Dice the tomatoes, discarding the core and any excess juices and seeds.

  • In a medium mixing bowl, combine the diced tomatoes, olive oil, balsamic vinegar, garlic, fine sea salt and black pepper. Stir to combine. Then gently stir in the fresh basil. Set aside for 20-30 minutes to allow the flavors to develop.

Toast the Bread and Assemble:

  • Preheat oven to 425°F with oven rack in the upper third of the oven. Cut the baguette on the diagonal into ½-inch thick slices. Arrange the bread slices on a rimmed baking sheet. Brush top sides lightly with olive oil. Toast the bread in the oven for 5-7 minutes, until lightly golden.

  • As soon as the bread is cool enough to handle (but still warm), cut a garlic clove in half. Rub the warm toasts with the cut side of the garlic to infuse the bread with garlic flavor.

  • Spoon some of the tomato mixture on top of each toast. Serve immediately. (Alternatively, you can serve the toasts and tomato topping separately and let guests spoon their topping onto their bread.)

Notes

  • Make Ahead: Bruschetta is best served shortly after making it. If you are preparing it to bring to a party, you can make the topping and toast the bread a few hours ahead of time. Add the fresh basil to the topping right before serving so that it doesn't wilt or turn dark. Store the toasted bread and topping separately until serving.
