No-Bake Energy Bites
No-Bake Energy Bites are one of my very favorite things. These bites have oats, coconut, nut butter, flaxseed, and mini chocolate chips, all rolled into easy to grab little bites. They are a perfect snack for kids and adults alike!

Let’s talk about these No-Bake Energy Bites. They are just about the best snack ever. They’re easy to make (hello no-bake!), fun to eat, and so delicious. Plus, other than the sugar from the honey and chocolate chips, they are made with all healthy ingredients. You could leave out the chocolate chips or replace them with some dried fruit, but they are pretty tasty as is.

I make a batch of these energy bites just about every week, because they are so convenient to have on hand. You can pop them in your family’s lunchboxes before heading off for the day, and look forward to a little treat come lunchtime. I also like to grab one or two mid-morning when I’m at home with the kids and need a little snack to get me through until lunch.

No-bake snacks are one of my favorite things right now. To make these, you simply stir together the dry ingredients, whisk together the wet ingredients, and then stir it all together. After a quick 30-minutes of chill time in the refrigerator, the mixture is ready to be formed into balls. This is pretty easy to do if you press the mixture into a ball in the palm of your hand, rather than trying to roll them. If your mixture is crumbly and won’t stick together, just add a little bit more nut butter and/or honey. Mine usually works fine as is.
These little bites are totally addictive! I don’t feel guilty about eating one (or three!) because I know they are full of nutritious ingredients like oats, flaxseed, and nut butter. No-Bake Energy Bites are a treat that your whole family will enjoy.

- ½ cup coconut flakes
- 1 cup old-fashioned oats
- ½ cup brown rice crisp cereal
- ½ cup ground flaxseed
- ¼ tsp. cinnamon
- ½ cup nut butter (I've used almond butter and peanut butter, as well as a combination of the two)
- ⅓ cup honey
- 1 tsp. vanilla
- ¼ cup mini chocolate chips (can substitute dried blueberries or raisins)
- Toast coconut in a small skillet over medium heat, 4-6 minutes, stirring occasionally and being careful not to burn it. It's done when some of the flakes are lightly golden.
- In a medium bowl, stir together toasted coconut, oats, brown rice cereal, flaxseed, and cinnamon.
- In a liquid measuring cup or bowl, whisk together nut butter, honey, and vanilla. Pour over oat mixture and stir until everything is well combined. Stir in chocolate chips.
- Chill in refrigerator for 30 minutes.
- Use a small scoop, spoon, or your hands to scoop mixture and form into balls. I usually press the mixture into a ball using my palm, rather than rolling it. Store in an airtight container in the refrigerator for up to 1 week.

No bake energy bites are one of my all time favorites as well! I have no self control around them though, and usually finish the whole batch in a day … whoops 🙂 Coconut and nut butters are amazing together!

Thanks, Kelly! The rice cereal is great in these. This is the only recipe I’ve tried, but it’s so good I didn’t feel the need to look any further! My favorite way to make these is with half almond butter and half peanut butter. The combination is amazing!
