{10 Minute} No-Bake Granola Bars
These chewy No-Bake Granola Bars are packed with oats, crispy rice cereal, and toasted coconut. You can mix up a batch of these homemade granola bars in just 10 minutes, and then comes the hard part – waiting for them to chill in the refrigerator before you can dig in!
This no-bake granola bar recipe has been a long time in the making. I think it was about a year ago when I tried my first no-bake granola bar recipe. Unfortunately, those bars did not work out so well. They were way too sweet, and fell apart when you tried to eat them.
Since then I’ve done quite a few experiments with no-bake bars. My first big success was these Peanut Butter Granola Bars. If you haven’t tried them yet and you’re a peanut butter lover, well, what are you waiting for?
What I’ve discovered through my numerous test batches of no-bake bars is that nut butter is an essential ingredient for holding the bars together without making them overly sweet. I love a good peanut butter granola bar, but sometimes I want a bar without peanut butter flavor. (I know, crazy, right?) With this granola bar recipe I used almond butter, honey, and coconut oil to help bind the bars together. I also added a little bit of melted unsalted butter. I tried making the bars without the butter, and they didn’t hold together nearly as well. If you can’t do nut butter for allergy reasons (or personal preference), then sunbutter would be a good alternative.
These No-Bake Granola Bars are barely-sweet chewy snack bars filled with oats and a hint of toasty coconut flavor. Puffed brown rice cereal adds a bit of crispiness in each bite. I added a dark chocolate drizzle because, well, dark chocolate. I think that’s self explanatory. (Feel free to leave off the chocolate if you want – the bars are plenty scrumptious plain too.)

No-Bake Granola Bars
Ingredients
- ½ cup unsweetened coconut flakes
- 2 cups quick oats
- 1 cup puffed brown rice cereal
- ½ cup almond butter
- ¼ cup refined coconut oil
- ¼ cup honey
- 2 tbsp. unsalted butter, cut into cubes
- 1 tsp. vanilla extract
- ¼ tsp. salt
- scant ¼ cup dark chocolate chips
Instructions
- Line an 8x8-inch square baking dish with parchment paper; spray the parchment with nonstick cooking spray.
- In a small skillet, toast the coconut over medium-low heat until it just begins to brown, stirring often, about 4 minutes. Watch it carefully, as it can go from toasted to burnt quickly!
- In a large bowl, stir together toasted coconut flakes, oats, and brown rice cereal.
- In a microwave-safe liquid measuring cup or bowl, combine the almond butter, coconut oil, honey, and butter. Microwave on high for 30 seconds, stir, and then microwave as needed in 15-second intervals until melted and smooth. Stir in the vanilla and salt until well combined.
- Pour the almond butter mixture over the oat mixture and stir until everything is well coated. Transfer to the prepared baking dish and press the mixture evenly and firmly down into the pan. (Lay a sheet of parchment paper over the top to prevent the mixture from sticking to your hand as you press it down.)
- Chill in the refrigerator for at least an hour before removing the parchment and bars from the pan and slicing into bars.
- Melt the chocolate chips in a microwave-safe bowl by heating for 1 minute, stirring, and then heating in 15-second intervals until completely melted. Drizzle chocolate over granola bars.
- Granola bars are best stored in the refrigerator, and will keep for about a week.
