These homemade peanut butter granola bars are the perfect thing to make when you are short on time yet still want a satisfying and delicious snack. I added dry roasted peanuts to these granola bars for crunch and a delicious flavor. The brown rice cereal adds crispiness, and honey gives a touch of sweetness. After making these no bake bars, I can’t stop thinking of other delicious variations and mix ins. There are so many possibilities.

These Healthy Peanut Butter Granola Bars make a perfect quick snack when hunger hits and are high in protein. I know I’ve been so glad to have these in my fridge the past few weeks when I needed a snack (or even breakfast) in a hurry! For a fun twist, you can roll the granola bar mixture into balls to make energy bites instead of bars.

To make this recipe gluten-free, be sure to use gluten-free oats and rice cereal.

After forming the granola bars into the pan, chill before cutting and serving. Peanut Butter Granola Bars should be stored in an airtight container and will last a week in the refrigerator.
