Those of you who are regular readers know how much I love to make (and eat!) homemade snacks. So it should come as no surprise to you that I’ve used some of my rare moments of free time lately to create these no bake Nutty Peanut Butter Granola Bars.

These no bake bars are the perfect thing to make when you are short on time yet still want a satisfying and delicious snack. You can make them in just minutes and you likely have all of the ingredients in your pantry. The only thing that you might not have is the puffed brown rice cereal, but once you make these bars I think you’ll be keeping that stocked so you can make them again and again!

I added dry roasted peanuts to these Nutty Peanut Butter Granola Bars for crunch. The brown rice cereal adds crispiness, and honey gives a touch of sweetness. After making these no bake bars, I can’t stop thinking of other delicious variations and mix ins. There are so many possibilities, I’m having a hard time deciding what type of no bake bar to make next!

These Nutty Peanut Butter Granola Bars make a perfect quick snack when hunger hits. I know I’ve been so glad to have these in my fridge the past few weeks when I needed a snack (or even breakfast) in a hurry! For a fun twist, you can roll the granola bar mixture into balls to make energy bites instead of bars.

The hardest part to making these Nutty Peanut Butter Granola Bars? Waiting for them to chill for an hour in the fridge before digging in!

Nutty Peanut Butter Granola Bars {No Bake}
 
These Nutty Peanut Butter Granola Bars have a rich peanut butter flavor and take just 10 minutes to make.
Recipe type: Snack
Serves: 14
Ingredients
  • 1 ½ cups quick oats
  • 1 cup puffed brown rice cereal
  • ½ cup dry roasted peanuts, coarsely chopped
  • 1 cup creamy peanut butter (I use natural peanut butter)
  • ½ cup honey
  • 1 tsp. vanilla extract
  • ¼ tsp. salt
Directions
  1. Line an 8x8-inch pan with parchment paper; set aside.
  2. In a large bowl, stir together the quick oats, puffed brown rice cereal, and peanuts.
  3. Place peanut butter and honey in a microwave-safe liquid measuring cup or bowl. Microwave on high for 45 seconds, stir, add vanilla and salt; stir until smooth. Microwave 15 more seconds to re-melt if needed.
  4. Stir peanut butter mixture into oat mixture until everything is evenly coated.
  5. Transfer the mixture to the parchment-lined pan and use your hand to press it firmly into the pan. Refrigerate for at least an hour before cutting into bars.
  6. Store in an airtight container in the refrigerator for up to 1 week.
