Overnight Oats with Chia Seeds are a High Fiber, Make-Ahead Breakfast

Overnight oats are not new to me (I shared my first overnight oats recipe over 10 years ago!), but this particular version with chia seeds is the one that I’ve been making 3-4 times a week for the past few months. When I shared about them in my Instagram stories, I got so many requests for the recipe that I knew I had to give them their own post on the blog. So here we are!

I love these overnight oats with chia seeds because they have more staying power than other versions. The chia seeds are high in fiber (something I’m always trying to get more of). They soak up liquid, plumping up overnight in the fridge, to make these overnight oats extra creamy and filling. I also mix in almond butter (or peanut butter) and plain Greek yogurt for protein and healthy fats.

I like to top these with fresh or frozen berries, and sometimes I add sliced almonds, too. I hope you enjoy this easy breakfast recipe as much as I do!

Ingredient Notes

  • Old Fashioned Rolled Oats: I only use 1/4 cup oats per serving, which doesn’t sound like much but once you add the chia seeds, Greek yogurt and nut butter it makes a perfect serving size. Do not substitute quick oats or steel cut oats.
  • Chia Seeds: I store these in the freezer to keep them fresh.
  • Pure Maple Syrup: I use the tiniest drizzle (just 1/2 teaspoon) to add subtle sweetness. You can adjust to your tastes.
  • Cinnamon & Sea Salt: Don’t skip these! They really add to the flavor.
  • Milk: I use unsweetened vanilla almond milk. Use your milk of preference.
  • Plain Greek Yogurt: The yogurt adds protein and a bit of tartness, which is balanced out by the maple syrup.
  • Nut Butter: I like to use smooth almond butter. Peanut butter also works great. The nut butter isn’t essential but it does give the oats more staying power.
  • Toppings: Fresh or frozen berries, sliced banana, chopped nuts, coconut flakes, diced peaches, kiwi or apple… use whatever is in season that you enjoy!

How to Make Overnight Oats with Chia Seeds

  1. Combine ingredients: In a jar or bowl, stir together the oats, chia seeds, pure maple syrup, cinnamon, salt, Greek yogurt, nut butter and milk.
  2. Refrigerate for at least 8 hours and up to 4 days.
  3. Serve: When you’re ready to eat the oats, add your desired toppings and enjoy!

Make a Big Batch or Single Servings

It’s not just me who loves these overnight oats – my kids often ask for them too! I’ll make a big batch in a large batter bowl to spoon out for my younger kids. They like fewer chia seeds so I reduce those a bit in theirs.

My oldest daughter loves these as is, and they’re great for grab and go make-ahead breakfasts if you prep them in mason jars.

Do You Eat Overnight Oats Cold?

I do! If you haven’t tried cold overnight oats, I highly recommend you do. They are so good that way, especially in the summertime. If you can’t get behind eating them cold, you can warm them in the microwave before serving.

More Tips for the Best Overnight Oats

  • Mix the chia seeds in well. You don’t want any clumps of seeds. Use a spoon to scoot any seeds stuck on the sides of the jar down into the liquid so they’ll soften up in the fridge.
  • Add toppings right before serving. The exception is if you are using frozen berries you can add those on top of the oats the night before and they will defrost overnight in the fridge.
  • Overnight oats will last for up to 4 days in the refrigerator. I like to make individual portions of oats in 16 ounce jars. This leaves room for toppings. Note that the chia seeds will continue to absorb liquid over time. If the oats get too thick, stir in a little extra milk when serving.
  • You can scale this recipe up to make a bigger batch for meal prep. As written, this recipe makes one serving.

These overnight oats with chia seeds are a delicious, high fiber make-ahead breakfast. They're creamy and filling thanks to chia seeds, Greek yogurt and nut butter mixed into the oats. Meal prep a few days' worth and enjoy them cold from the fridge topped with fresh fruit!

Ingredients

Base Recipe:

  • ¼ cup old fashioned rolled oats
  • 1 tablespoon chia seeds
  • ½ teaspoon pure maple syrup, or to taste
  • teaspoon ground cinnamon
  • 1 pinch fine sea salt
  • 2 tablespoons plain Greek yogurt
  • 1 tablespoon almond butter or peanut butter, not essential but it does make the oats more filling
  • ½ cup unsweetened vanilla almond milk, or your milk of choice

For Serving:

  • fresh berries or sliced banana
  • sliced almonds or chopped toasted pecans or walnuts

Instructions
 

  • In a mason jar or bowl, combine the old fashioned rolled oats, chia seeds, pure maple syrup, cinnamon, salt, plain Greek yogurt, nut butter and almond milk. Mix until very well combined. Use a spoon to press any chia seeds that are stuck to the sides of the jar down into the liquid.
    ¼ cup old fashioned rolled oats, 1 tablespoon chia seeds, ½ teaspoon pure maple syrup, ⅛ teaspoon ground cinnamon, 1 pinch fine sea salt, 2 tablespoons plain Greek yogurt, 1 tablespoon almond butter or peanut butter, ½ cup unsweetened vanilla almond milk
  • Cover and refrigerate overnight (for at least 8 hours and up to 4 days).
  • Stir again before serving. Add your desired toppings, such as fresh berries, sliced banana or nuts. Enjoy!
