How to Cook Zucchini in the Air Fryer

- Preheat the air fryer to 400° F for 5 minutes.
- While the air fryer heats up, chop the zucchini into 1/2-inch pieces.
- Season the zucchini by first drizzling it with olive oil and then sprinkling on the Italian seasoning, salt and pepper. Toss to coat all of the zucchini with the oil and seasonings.
- Air fry the zucchini in a single layer in the air fryer basket for 6-8 minutes at 400° F. After 5 minutes, shake the basket to flip the zucchini.
- Sprinkle on the grated Parmesan and enjoy!

- Preheat the air fryer so that the basket is hot when you add the zucchini.
- Small to medium sized zucchini are best for this air fryer recipe. Smaller zucchini have the best flavor, while large zucchini can be bitter and tend to have more water content so will turn out soggier after cooking.

Air Fryer Zucchini
Ingredients
- 2 medium zucchini
- 1 tablespoon olive oil
- ½ teaspoon Italian seasoning
- ¼ teaspoon Kosher salt, or to taste
- black pepper, to taste
- 1-2 tablespoons grated Parmesan cheese
Instructions
- Preheat the air fryer to 400° F for 5 minutes.
- Meanwhile, prep the zucchini. Slice off the stem and base ends. Quarter the zucchini lengthwise and then cut it into ½-inch pieces. Place in a medium bowl.
- Drizzle the olive oil over the zucchini. Sprinkle on the Italian seasoning, salt and pepper. Toss to coat.
- Put zucchini in the air fryer basket in a single layer (cook in 2 batches or as needed). Air fry at 400° F for 6-8 minutes total, until zucchini is tender, shaking the basket to flip the zucchini after 5 minutes.
- Sprinkle the Parmesan cheese over the zucchini while it is hot and serve.
