Greek Turkey Burgers

Juicy and packed with flavor, these Greek turkey burgers are one of our favorite easy dinners! I’ve included cooking instructions for the grill, stove, oven and air fryer.

When I want a change from my usual Turkey Burger Recipe, I make these Greek turkey burgers! Just like my Greek Chicken Bowls and Mediterranean Tuna Salad, they’re full of fresh Mediterranean flavors.

These Greek turkey burgers are incredibly moist and juicy. My secret? I add a tablespoon of mayo to the burger mix. The mayo, along with finely chopped red onion, red bell pepper and feta adds moisture and flavor.

  • Ground Turkey: I use 93% lean ground turkey. Don’t use anything leaner, since you need a bit of fat for flavor and moisture.
  • Mayonnaise: Speaking of fat, moisture and flavor, just 1 tablespoon of mayo adds all three to the burger mix!
  • Feta Cheese: Crumbled feta adds a mega flavor boost.
  • Red Onion & Red Bell Pepper: Chop them finely so you get little bits throughout the burgers.
  • Dijon Mustard: I use a smooth Dijon.
  • Seasonings: You’ll need garlic powder, dried oregano, salt and pepper.

Recipe Variations

  • Olives are optional. You can add 1/4 cup of chopped kalamata olives to the turkey mixture as well. I prefer these without the olives, but you do you!
  • Add spinach. You can add 1/2 cup of chopped fresh spinach to the meat mixture.
  • Fresh herbs. Try adding 2 teaspoons chopped fresh dill or 2 tablespoons chopped fresh parsley.

How to Make Greek Turkey Burgers

Plus, my best tips for making this recipe!

Make burger mixture. Mix together the ground turkey, feta, red onion, bell pepper, mayonnaise, Dijon mustard, garlic powder, dried oregano, salt and pepper in a large bowl. I usually start mixing with a fork and finish with my hands. Mix until just combined; you don’t want to overwork the meat.

Shape burger patties. Divide the turkey mixture into 4 equal parts. Shape each part into a 1/2-inch thick burger patty.

Kristine’s Tip: If the patties seem very delicate and you plan to cook them on an outdoor grill, I recommend freezing them for about 30 minutes to firm them up. (Freeze them on a parchment paper lined baking sheet.) I didn’t find this step necessary, but it can depend on the brand/type of ground turkey you use.

Cook. Cook the burgers until they reach 165ยฐ F in the center. You’ll find instructions for cooking the burgers on the stove, on the grill, in the air fryer and in the oven in the recipe card below.

Serving Ideas

  • Serve the burgers in burger buns or lettuce wraps.
  • Top them with sliced avocado, tzatziki or hummus.
  • Add sliced tomato, thinly sliced red onion and lettuce.

To Make Ahead and Freeze

You can make the burger patties ahead of time and freeze them for later, before cooking. Place the shaped patties on a parchment paper-lined baking sheet. Freeze for a few hours, until fully frozen. Then stack the frozen burgers with a square of parchment paper in between each one and freeze in an airtight container for up to 3 months.

You can cook them from frozen, adding a few extra minutes to the cook time.

Greek Turkey Burgers

Ingredients

  • 1 pound 93% lean ground turkey
  • โ…“ cup crumbled feta cheese
  • ยผ cup finely chopped red onion
  • ยผ cup finely chopped red bell pepper
  • 1 tablespoon mayonnaise
  • 1 tablespoon Dijon mustard
  • ยฝ teaspoon garlic powder
  • ยฝ teaspoon dried oregano
  • ยฝ teaspoon salt
  • ยผ teaspoon black pepper

For Serving

  • tzatziki sauce, or sliced avocado
  • lettuce, thinly sliced red onion and sliced tomato
  • 4 burger buns, or lettuce for wrapping

Instructions
 

  • In a large bowl, combine ground turkey, feta, red onion, bell pepper, mayonnaise, Dijon mustard, garlic powder, dried oregano, salt and pepper. Mix with a fork or your hands until just combined.
  • Divide the turkey mixture into 4 equal parts and shape into patties that are about 1/2-inch thick.

To Cook on the Stove:

  • Heat a grill pan or skillet, such as a cast iron skillet, over medium heat. Add about 1 tablespoon of oil to the pan and spread it around.
  • When the pan is hot, place the turkey burger patties in the pan. Cook about 5-6 minutes per side, until cooked to an internal temperature of 165ยฐ F. The burgers should release fairly easily from the pan when they are ready to flip to the second side. Serve in buns or lettuce wraps, with toppings as desired.

To Cook on the Grill:

  • Optional: Freeze turkey burger patties in a single layer in a baking dish lined with parchment paper for 30 minutes to help them hold together on the grill. (Turkey burgers can be more delicate than beef burgers, but I find these grill fine without freezing as long as you are careful with them.)
  • Heat an outdoor grill with clean grill grates to medium-high heat. Oil the grill grates well to keep the burgers from sticking.
  • Cook burgers about 5-6 minutes per side until cooked to an internal temperature of 165ยฐ F. Do not flip the burgers too early when cooking on the first side or they may fall apart. Serve in buns or lettuce wraps, with toppings as desired.

To Cook in the Oven:

  • Preheat oven to 400ยฐ F. Line a rimmed baking sheet with parchment paper and place turkey burger patties on the pan.
  • Bake for about 20 minutes, flipping once after 10 minutes. Turkey burgers are done when they reach an internal temperature of 165ยฐ F. Serve in buns or lettuce wraps, with toppings as desired.

To Cook in the Air Fryer:

  • Preheat the air fryer to 380ยฐ F for 5 minutes. Place burgers in a single layer in the air fryer basket. Cook at 380ยฐ F for 6 minutes. Then flip burgers over and cook for 5-7 more minutes, until they are cooked through. Burgers should be cooked to 165ยฐ F in the center.
