Happy Wednesday! How can it be that January is almost over? It seems like it was just a few days ago that I was writing this New Year’s post. I know they say that when raising young children the days go by slowly and the years fly by, but around here it seems that it’s the days, weeks… everything that go by especially quickly. A busy, full life will do that I suppose.  Happily, it’s full of great things like snuggles with my sweet kids, story time, watercolor painting, and playtime at the park.

Today I’m sharing a green smoothie recipe that my kids and I both love. If you haven’t yet tried a green smoothie, then what are you waiting for? When made with fruit and unsweetened Greek yogurt, smoothies are a nutritious snack that will fill you up and give a boost of energy. Green smoothies, made with spinach or kale, are full of even more nutrients. Plus, I just love the beautiful green color.

When I make my smoothies, I don’t measure out the ingredients, unless I’m writing down the recipe to share. Usually I just add everything straight into the blender and make any needed adjustments as I go. I’ve been making this peach, mango, and kale smoothie a lot lately, and I’ve tried a few different recipe variations. The one listed below is my favorite, but I’ve also used frozen pineapple in place of the mango, added an orange or apple instead of the pear, and subbed spinach for the kale. If you try the smoothie with an apple (unpeeled and chopped) or an orange (peeled and segmented), you will notice that the texture won’t be quite as smooth, but it will still be delicious.

Here in California we have been having record warm weather (we desperately need rain!), and I know many parts of the country are experiencing record cold temperatures. Peach, Mango and Kale Smoothie

Printable Recipe

Makes 2 servings

Ingredients:

  • ½ banana
  • 1 pear, cored and sliced
  • 1 cup lowfat Greek yogurt
  • 3 cups kale leaves (removed from tough stalks)
  • ¾ cup water
  • 1 ½ cups frozen peaches
  • 1 cup frozen mango
  • 1 ½ tsp. honey

Directions:

  1. Place banana, pear, yogurt, kale, and water in a blender. Blend until smooth. Add frozen peaches, mango, and honey and puree until smooth. If smoothie is too thick, blend in a little more water. Serve immediately.

  1. I might try making this with milk or OJ instead of the yogurt — yum!

  2. We make a lot of smoothies… always adding either kale or spinach…but we also add a tablespoon or so of flaxseed meal…gives it a little bit of a nutty flavor. I keep frozen several different kinds of frozen fruits on hand so the kids can just make whatever concoction they can come up with :)

    • Yes, that’s one of the best things about smoothies- you can throw in whatever you have on hand. I love adding flaxseed to my smoothies, too. Whenever I do, Julia always tells me how you can’t taste the flax because it’s blended in. :)
