When you need an easy dinner idea that the whole family will love, this hamburger soup is always a hit! Made with ground beef and plenty of healthy veggies, this comforting soup is both nourishing and delicious. 

Like my Minestrone Soup recipe, this hamburger soup has a rich, flavorful broth. A combination of fire roasted diced tomatoes, tomato paste and seasonings makes the soup full-flavored and hearty.

Hamburger Soup Recipe Ingredients

The basic ingredients for this hamburger soup recipe are ground beef, vegetables, tomatoes, beef broth and seasonings. This recipe is easily customizable to use up whatever veggies you have on hand.

  • Ground Beef: I used 90% lean ground sirloin. You can also use 80% or 85% lean ground beef. Just be sure to drain off any excess grease after browning the meat. You can substitute ground turkey for the ground beef, if desired.
  • Olive Oil: For sautéing the onion and carrot.
  • Vegetables: This soup is loaded with healthy veggies, including onion, carrots, potatoes, green beans and corn. For the potatoes, I recommend using Yukon gold potatoes because they hold their shape without falling apart in the soup. Feel free to substitute other vegetables that you have on hand.
  • Diced Tomatoes: I used fire roasted diced tomatoes, which add another layer of flavor to the soup.
  • Tomato Paste: The tomato paste brings rich tomato flavor to the broth and helps to thicken the soup.
  • Beef Broth: I recommend using a low sodium beef broth so that you can better control the amount of salt in the soup. I’ve also made this soup with chicken broth when I didn’t have beef broth on hand.
  • Seasonings: Fresh garlic, Italian seasoning, paprika, salt and black pepper bring lots of flavor to this easy soup recipe. These seasonings really complement the flavors of the beef and vegetables.

How to Make Hamburger Soup

A few simple steps make all the difference in making the best hamburger soup. Here’s an overview of how to make this recipe. Find the full recipe with ingredient amounts and instructions in the recipe card below.

  1. In a large Dutch oven or other heavy pot, sauté the onion and carrots in olive oil until softened. Sauteing carrots and onion in dutch oven pot.
  2. Add the ground beef, salt and pepper. Cook, crumbling the meat, until the beef is browned. Browning ground beef in pot.
  3. Stir in the garlic, potatoes, tomato paste, Italian seasoning and paprika. Cook for 2-3 minutes, stirring often. This step adds so much flavor to the soup. It helps to cook off the raw tomato paste flavor, giving you a richer broth. Potatoes, tomato paste and seasonings added to pot.

  5. Simmer the soup, covered, for 20-25 minutes, until the vegetables are tender.

What to Serve with Hamburger Soup

Storage & Reheating Tips

This soup keeps well in the refrigerator or freezer for quick meals later on. To store and reheat:

  • Refrigerator: Store in an airtight container in the refrigerator for up to 3 days. 
  • Freezer: Let soup cool completely and then store in an airtight container in the freezer for up to 3 months. Thaw soup overnight in the refrigerator before reheating.
  • To Reheat: Reheat in a covered pot on the stove over medium heat, stirring occasionally, until hot. Individual servings of soup can also be reheated in the microwave.

  • 1 medium yellow onion, chopped
  • 3 carrots, sliced into â…›-inch thick rounds
  • 1 pound lean ground beef
  • 1 teaspoon salt, or to taste
  • ½ teaspoon black pepper, or to taste
  • 4 cloves garlic, minced
  • ½ pound Yukon gold potatoes, about 2 medium, chopped into ½-inch pieces
  • 2 tablespoons tomato paste
  • 1 ½ teaspoons Italian seasoning
  • 1 teaspoon paprika
  • 4 cups low sodium beef broth
  • 14.5 ounce can fire roasted diced tomatoes
  • 1 cup chopped green beans, 1-inch pieces, fresh or frozen
  • 1 cup frozen or canned corn

Instructions
 

  • Heat the olive oil in a large Dutch oven or other heavy pot over medium heat. Add the onion and carrots and cook for 3-4 minutes, stirring occasionally.
  • Add the ground beef, salt and pepper and cook, crumbling the meat, until the beef is browned. Drain off any excess grease (this will probably not be necessary if using 90% or leaner ground beef).
  • Stir in the garlic, potatoes, tomato paste, Italian seasoning and paprika. Cook for 2-3 minutes, stirring often.
  • Stir in the beef broth, diced tomatoes, green beans and corn.
  • Bring the soup to a boil and then reduce heat to a simmer. Cover and simmer for 20-25 minutes, stirring occasionally, until the vegetables are tender. Serve.
