Peanut Butter Granola Bars {No Bake}
A healthy no-bake homemade peanut butter granola bar recipe you can make in just 10 minutes. These Peanut Butter Granola Bars have a rich peanut butter flavor and can be made gluten-free.
Those of you who are regular readers know how much I love to make (and eat!) homemade snacks. So it should come as no surprise to you that I’ve used some of my rare moments of free time lately to create these no-bake granola bars.
These homemade peanut butter granola bars are the perfect thing to make when you are short on time yet still want a satisfying and delicious snack. You can make them in just minutes and you likely have all of the ingredients in your pantry. The only thing that you might not have is the puffed brown rice cereal, but once you make these bars I think you’ll be keeping that stocked so you can make them again and again!
I added dry roasted peanuts to these granola bars for crunch and a delicious flavor. The brown rice cereal adds crispiness, and honey gives a touch of sweetness. After making these no bake bars, I can’t stop thinking of other delicious variations and mix ins. There are so many possibilities.
These Healthy Peanut Butter Granola Bars make a perfect quick snack when hunger hits and are high in protein. I know I’ve been so glad to have these in my fridge the past few weeks when I needed a snack (or even breakfast) in a hurry! For a fun twist, you can roll the granola bar mixture into balls to make energy bites instead of bars.
To make this recipe gluten-free, be sure to use gluten-free oats and rice cereal.
After forming the granola bars into the pan, chill before cutting and serving. Peanut Butter Granola Bars should be stored in an airtight container and will last a week in the refrigerator.
Peanut Butter Granola Bars {No Bake}
Ingredients
- 1 ½ cups quick oats
- 1 cup puffed brown rice cereal
- ½ cup dry roasted peanuts, coarsely chopped
- 1 cup creamy peanut butter, I use natural peanut butter
- ½ cup honey
- 1 tsp. vanilla extract
- ¼ tsp. salt
Instructions
- Line an 8x8-inch pan with parchment paper; set aside.
- In a large bowl, stir together the quick oats, puffed brown rice cereal, and peanuts.
- Place peanut butter and honey in a microwave-safe liquid measuring cup or bowl. Microwave on high for 45 seconds, stir, add vanilla and salt; stir until smooth. Microwave 15 more seconds to re-melt if needed.
- Stir peanut butter mixture into oat mixture until everything is evenly coated.
- Transfer the mixture to the parchment-lined pan and use your hand to press it firmly into the pan. Refrigerate for at least an hour before cutting into bars.
- Store in an airtight container in the refrigerator for up to 1 week.
