Oven Baked Bone-In Pork Chops

Pork chops are such an underrated dinner idea – once you try these juicy baked bone-in pork chops you’ll wonder why you haven’t been cooking pork chops more often! I use thick, bone-in pork chops in this recipe to ensure that they stay moist and juicy throughout as they bake in the oven.

A simple dry rub brings incredible savory flavor to these pork chops. My secret ingredient in the pork rub is brown sugar, which helps the seasonings to caramelize on the chops as they bake. It makes such a difference! I add a pat of butter on top of each pork chop, which melts down in the oven to make these pork chops extra moist and flavorful.

How to Bake Bone-In Pork Chops in the Oven

  1. Let the pork chops come to room temperature for 20 minutes.
  2. Mix together the seasonings (brown sugar, paprika, chili powder, garlic powder, dried thyme, onion powder, salt and pepper). Rub the seasoning mixture over all sides of the pork chops, then place a pat of butter on top of each one.

  1. Bake bone-in pork chops in a 425ยฐ F oven for 18-25 minutes, or until an instant read thermometer inserted into the thickest part of the pork chops not touching the bone registers 145ยฐ F. Let them rest for 5 minutes before serving.

How to Tell if Pork Chops are Done

I’ve found 425ยฐ F to be the best baking temperature for pork chops that come out perfectly juicy and tender inside with delicious caramelized edges. The exact cook time will depend on the size and thickness of the pork chops. An instant read thermometer is the most reliable way to test if your pork chops are done. Insert it into the thickest part of the meat, not touching bone.

The USDA recommends that you cook pork chops to an internal temperature of at least 145ยฐ F and then allow the meat to rest for at least 3 minutes, for food safety. I cook my pork chops to an internal temperature of 145-150ยฐ F. Anything beyond that and you risk dry, tough pork chops.

Tips for the Best Juicy Oven Baked Bone-In Pork Chops

  • Let the chops come to room temperature for 20 minutes before cooking. This helps them to cook more evenly.
  • Don’t overcook pork chops or they will turn out dry and tough.

Seasoning Rub

  • 2 tablespoons brown sugar
  • 2 teaspoons paprika, sweet or smoked*
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • ยฝ teaspoon onion powder
  • 1 teaspoon salt
  • ยผ teaspoon black pepper

Remaining Ingredients

  • 4 bone-in pork chops, about 1 to 1ยผ inches thick
  • 3 tablespoons butter

Instructions
 

  • Let pork chops come to room temperature for 20 minutes. Meanwhile, preheat oven to 425ยฐ F. Line a rimmed baking sheet with parchment paper.

  • Combine all seasoning rub ingredients (brown sugar, paprika, chili powder, garlic powder, dried thyme, onion powder, salt and black pepper) in a small bowl. Whisk or stir until well blended.
    2 tablespoons brown sugar, 2 teaspoons paprika, 1 teaspoon chili powder, 1 teaspoon garlic powder, 1 teaspoon dried thyme, ยฝ teaspoon onion powder, 1 teaspoon salt, ยผ teaspoon black pepper
  • Rub seasonings over all sides of pork chops and place on the prepared baking sheet. Cut the butter into 4 thin "pats" and place one pat of butter on top of each pork chop.
    3 tablespoons butter
  • Bake for 18-25 minutes, until an instant read thermometer inserted into the thickest part of the pork chops not touching the bone registers 145ยฐ F. The cook time will depend on the thickness of the pork chops. Be careful not to overcook the pork chops or they may dry out.
  • Let pork chops rest for 5 minutes and then serve.
