And my kids do too. (Uh oh.) Julia especially, but William’s extreme hunger grumpiness came out the other day as well. Three people in one house who all get crazy hungry at one time is not a good thing. Trust me on this one.

What’s a hungry mom to do? Plan ahead! I pretty much always have an idea of what we are going to eat for lunch before lunchtime rolls around. Even if it’s going to be peanut butter and jelly, or a grilled cheese sandwich and fruit, I know what we will be eating. And I try to start preparing lunch before the hanger gets to the extreme level. Everyone’s happier that way. 🙂

This Easy Two Cheese Pasta with Chickpeas is one trick that I have up my sleeve when it comes to having lunch on the table in minutes. I can make a batch of this pasta earlier in the morning (or even the day before) and lunch is ready when those tummies start grumbling!

In the summer, the kids and I enjoy packing a picnic lunch to enjoy at the park. Everything tastes even better when enjoyed in the fresh air and if lunch is packed ahead of time we can eat whenever we like. This two cheese pasta is easily packable and is great for lunch at the park (or for your little ones at school). We even ate the leftovers for dinner one night when I didn’t feel like cooking.

I have a confession to make.  My son is not a fan of pasta.  (Unless in the form of macaroni and cheese. Of course.)  I know, how can that be?  Aren’t all kids supposed to like pasta?  Maybe you can talk to him for me.  Tell him pasta is really, really yummy.  Thank you.  Even so, William will eat the chickpeas, cheese, and tomatoes in this so there is something even for him, a non-pasta eater.

Between the whole-wheat pasta, chickpeas, mozzarella, and tomatoes, this Easy Two Cheese Pasta has plenty of protein and fiber to give you energy and keep you full for a while. I kept the seasonings simple to keep the kids happy, but the olive oil, lemon juice, and Parmesan add plenty of flavor. I sprinkled some extra black pepper on my helping and my tastebuds were very happy.

Easy Two Cheese Pasta with Chickpeas
 
Make a batch of this Easy Two Cheese Pasta with Chickpeas and you'll have a healthy lunch ready for yourself or the kids in no time!
Recipe type: Main Dish
Serves: 4-6
Ingredients
  • 8 oz. whole-wheat pasta
  • 1 ½ tbsp. extra virgin olive oil
  • 2 tsp. lemon juice
  • 1 cup canned chickpeas, rinsed and drained
  • 8 oz. cherry or grape tomatoes, halved or quartered
  • 4 oz. mozzarella cheese, cut into small cubes
  • ¼ cup grated Parmesan cheese
  • salt and pepper, to taste
Directions
  1. Cook pasta according to package directions; drain and rinse with cold water. Place pasta in a large bowl to cool briefly.
  2. Whisk together the olive oil and lemon juice. Pour over pasta and stir to evenly coat the pasta.
  3. Stir in the chickpeas, tomatoes, mozzarella, and Parmesan. Season with salt and pepper to taste. Serve cold or at room temperature.
