Air Fryer Potato Wedges

These air fryer potato wedges are so good, we could not stop eating them! Even the kids devoured these crispy potatoes. I shouldn’t be surprised, considering the fluffy insides, crispy edges and delicious seasonings (including Parmesan!)
I based the seasoning blend for these potato wedges off of our favorite Breakfast Potatoes recipe. This simple mix of seasonings makes these air fryer potato wedges so flavorful, with an irresistible touch of spice. Not set your mouth on fire spice, but just enough to make you want to go back for more.

Crispy Air Fryer Potato Wedges
Let’s talk about how to make these potato wedges CRISPY. A few simple tips will ensure success!
- Keep the skins on. Leaving the skins on the potatoes makes for crispier potato wedges. I love that this saves time, too.
- Soak the potatoes. I’ve debated the benefits of soaking potatoes before, but in this case we found that a 15-20 minute soak in cold water did lead to crispier potatoes.
- Dry them well. After soaking, use a clean kitchen towel or paper towels to remove all moisture from the potatoes. Moisture is the enemy of crispiness.
- Preheat the air fryer. You want the potatoes to start cooking and crisping as soon as they hit the hot basket!
- Don’t overcrowd the basket. Put the wedges in a single layer with a bit of room in between them so that the hot air can circulate around them as they cook.
- Give them a toss. Shaking the basket periodically during the cook time helps the potato wedges to cook and crisp evenly.
Air Fryer Potato Wedges Recipe Ingredients
The ingredient list for this recipe is short and simple!
- Russet Potatoes: Russets are the best potatoes to use here. The insides cook up nice and fluffy and the edges crisp up well.
- Olive Oil: Two tablespoons of olive oil promotes crisping and helps the seasonings to stick to the potatoes.
- Seasonings: Garlic powder, onion powder, smoked paprika, salt and black pepper bring lots of flavor. The wedges will be slightly spicy. If you are sensitive to spice you can omit the smoked paprika or use sweet paprika instead.
- Parmesan Cheese: This is optional, but highly recommended. Grated Parmesan adds an extra pop of flavor.
How to Make Air Fryer Potato Wedges

- Scrub the potatoes, leaving the skins on.
- Cut potatoes into wedges: First cut each potato in half lengthwise. Then cut each half into wedges.
- Soak potatoes in a bowl of cold water for 15-20 minutes. Then dry them very well. Wash and dry the soaking bowl and put the potatoes back in the bowl.
- Preheat the air fryer to 400° F for 5 minutes.
- Season the potatoes: Drizzle them with olive oil, sprinkle on the seasonings and toss to evenly coat.
- Air fry with the potatoes in a single layer in the air fryer basket. Cook for 18-22 minutes, tossing after the first 10 minutes and then again after every 5 minutes.
- Sprinkle with grated Parmesan cheese and serve.

The seasonings used in this recipe are my all-time favorite, but it’s always fun to mix things up a bit! Try these other seasoning ideas:
- Garlic Parmesan: Omit the paprika in this recipe. Sprinkle on additional garlic powder after cooking for a stronger garlic flavor.
- Italian: Add 1 teaspoon of Italian seasoning and omit the smoked paprika.
- Taco Seasoning: Season potato wedges with 1 tablespoon of Taco Seasoning instead of the seasonings in this recipe. Omit the Parmesan.
- Cajun: Season potato wedges with 2 teaspoons of Cajun Seasoning instead of the seasonings in this recipe. Omit the Parmesan.
Can I Use Sweet Potatoes?
Yes! Air fryer sweet potato wedges are a healthy and delicious snack. If using sweet potatoes, the wedges may take a few minutes less to cook, so start checking on them early.
How to Reheat Air Fryer Potato Wedges
The best way to reheat these potato wedges is in the air fryer. Just a few minutes at 375° F will heat them through and crisp them up again. Or, put them on a baking sheet in a 400° F oven until hot. You can also reheat them in the microwave, but they won’t be nearly as crispy.
Serving Suggestions
Serve your air fryer potato wedges with a dipping sauce, such as ketchup, fry sauce, Ranch Dressing or Honey Mustard. Enjoy them as a snack or appetizer (they’re great for game day!) or serve as a side dish with Turkey Burgers, Air Fryer Chicken Tenders or Baked Chicken Thighs.

Air Fryer Potato Wedges
Ingredients
- 2 russet potatoes, skins on
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons grated Parmesan cheese, optional
Instructions
- Scrub the potatoes, leaving the skins on. Cut the potatoes into wedges. To do this, first cut the potatoes in half lengthwise. Then cut each half into wedges.
- Place the potato wedges in a bowl of cold water and soak for 15-20 minutes.
- Remove the potatoes from the water and dry them very well. Wash and dry the soaking bowl and place the potatoes back in the bowl.
- Preheat the air fryer to 400° F for 5 minutes.
- While the air fryer preheats, drizzle the olive oil over the potatoes and sprinkle on the garlic powder, onion powder, smoked paprika, salt and pepper. Toss to mix very well, so that the potatoes are evenly coated with the oil and seasonings.
- Place potatoes in the air fryer basket and arrange them in a single layer in the basket (you will probably have to air fry in two batches to fit all of the potatoes in a single layer).
- Air fry at 400° F for 18-22 minutes, until potatoes are tender inside and crispy on the edges. Shake the basket to toss the potato wedges after the first 10 minutes of cook time, and then every 5 minutes after that. This helps them to cook and crisp evenly.
- Sprinkle grated Parmesan cheese over the potatoes, if desired, and serve immediately.
Notes
- Sweet potatoes can also be used. Sweet potato wedges may take a few minutes less to cook.
