These Sheet Pan Chicken Fajitas are the easiest way to make fajitas! Chicken breast strips, bell peppers and onions are tossed with fajita seasoning and baked in the oven. Serve in soft tortillas with your favorite toppings.

From the very first time I made this recipe, I knew it was going to be a regular in our dinner rotation. Not only are these sheet pan fajitas incredibly easy to make, but the flavor is spot on. This recipe starts with my homemade Fajita Seasoning, which is a simple mix of spices that brings incredible flavor to the chicken and veggies.

The best part about this recipe is that once you’ve got the seasoned chicken and veggies on the pan, your oven does the rest! As the fajitas bake, you can prep other components of the meal or just sit down and relax for a few minutes.

Ingredients

  • Fajita Seasoning: This recipe uses my homemade fajita seasoning, a perfect blend of spices: chili powder, paprika, garlic powder, onion powder, ground cumin, dried oregano, salt, sugar and cayenne pepper. The sugar brings a touch of sweetness that pairs so well with the spice, but feel free to omit it if you prefer.
  • Chicken Breast: Boneless skinless chicken breast cooks up tender and juicy.
  • Bell Peppers: I like to use a mix of colors for variety.
  • Yellow Onion: The flavor mellows and sweetens as it bakes.
  • Olive Oil: You’ll toss it with the chicken and veggies for flavor and to help the seasonings stick.
  • Lime Juice: Brightens up the flavors.
  • Fresh Cilantro: For a pop of fresh flavor.

How to Make Sheet Pan Chicken Fajitas

Mix together the seasonings.

Put the sliced chicken, bell peppers and onions on a baking sheet. Toss with olive oil and seasonings. Then spread everything out into an even layer.

Bake at 425° F for 18-20 minutes or until chicken is done, tossing halfway through to help it cook evenly.

Squeeze on the fresh lime juice, sprinkle on the chopped cilantro and serve.

How to Serve Fajitas

Fajitas are typically served wrapped in warm flour or corn tortillas. They are especially good served with these homemade tortillas. Then add your toppings: guacamole or avocado, sour cream, pico de gallo, shredded cheese, cotija cheese, whatever you like! Keep it simple, the filling is so flavorful that you don’t need much in the way of toppings.

These sheet pan fajitas are also wonderful served in a bowl with chopped lettuce and/or rice. I also like to add black beans or pinto beans and guacamole.

Recipe Tips

  • Slicing the chicken against the grain when you cut it into strips makes it more tender when serving.
  • Bake sheet pan fajitas at a high temperature, in this case 425° F. This browns the edges of the chicken while locking in the juices, and caramelizes the peppers and onions for the best flavor.
  • You can save time by making the fajita seasoning ahead of time. It can be stored in an airtight container at room temperature for up to 6 months.

This recipe is make ahead friendly and great for meal prep! Once you’ve baked the chicken and veggies, you can divide them up into meal prep containers and store in the refrigerator for up to 3 days. Add in some cooked rice to make it a complete meal. When you’re ready to eat, heat to steaming hot in the microwave and enjoy!

This Sheet Pan Chicken Fajitas recipe is my favorite way to make fajitas on a weeknight! Seasoned chicken, bell peppers and onions cook together on a baking sheet for a meal that's as easy as it is delicious. Serve in soft tortillas or add to a burrito bowl.

Ingredients

Fajita Seasoning

  • 1 tablespoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • ½ teaspoon dried oregano
  • 1 teaspoon salt, or to taste
  • 1 teaspoon granulated sugar, optional
  • ¼ teaspoon cayenne pepper, optional

Sheet Pan Fajitas

  • 1 ½ pounds boneless skinless chicken breasts, sliced against the grain into ½-inch thick strips
  • 3 bell peppers, I used red, yellow and orange, thinly sliced
  • 1 large yellow onion, thinly sliced
  • 2 tablespoons olive oil
  • juice of half a lime
  • ¼ cup chopped fresh cilantro

For Serving

  • 12 small flour tortillas, warmed
  • optional toppings: guacamole or avocado, sour cream, pico de gallo or salsa

Instructions
 

  • Preheat oven to 425° F.
  • Combine fajita seasonings in a small bowl. Whisk or stir until mixed well.
  • Line a rimmed baking sheet with parchment paper. Place the sliced chicken, bell peppers and onions on the baking sheet.
  • Drizzle with the olive oil and sprinkle with the fajita seasonings. Toss to evenly coat the chicken and vegetables with the seasonings. Then spread everything out in an even layer on the baking sheet.
  • Bake in the preheated oven for 18-20 minutes total, or until the chicken is cooked through. Stir/toss the chicken and veggies after the first 10 minutes in the oven and then spread them back out in an even layer and continue baking.
  • Squeeze the lime juice over the fajitas on the baking sheet and sprinkle with the chopped cilantro. Serve in warmed tortillas with toppings as desired.
