I always start my day with breakfast; in fact, it’s my favorite meal of the day!
The problem? Mornings are busy times! I have hardly a minute to spare in the morning, and I’m betting many of you are in the same situation. I still need a satiating meal to start my day, though!
When life is busy, make-ahead recipes are my lifesaver. Below you’ll find my favorite make ahead breakfast ideas, including delicious breakfast sandwiches and egg muffins, make ahead oatmeal and even breakfast cookies!
Make Ahead Breakfast Ideas
- Peanut Butter Overnight Oats. These have been my go-to make ahead breakfast lately! I love the rich peanut butter flavor and thick, creamy texture.
- Overnight Oats. This is my basic, 4-ingredient overnight oats recipe that I’ve been making for years (and my kids’ favorite!). I can whip these up in about 3 minutes, then in the morning I add fresh berries and nuts and enjoy.
- Chia Seed Pudding. I love this creamy chia pudding! It’s made with only 4 ingredients and so satiating and delicious. My recipe includes lots of ideas for customizing the flavors!
- Breakfast Burrito. My week is always better when I have a stash of these breakfast burritos in my freezer! With sausage, eggs, veggies and cheese, they’re filling and flavorful.
- Vegetarian Breakfast Burritos. When I want a satisfying breakfast burrito without meat, this is the recipe I make. The broccoli is a unique addition that works surprisingly well in this recipe.
- Breakfast Sandwich. Bacon, eggs and cheese layered between English muffins… need I say more? This make ahead breakfast is freezer-friendly. If you’re prepping them ahead, leave off the guacamole.
- Healthy Banana Muffins. These easy banana muffins are the most popular muffin recipe on Kristine’s Kitchen. They’re soft, fluffy and they freeze wonderfully. I make these often both for a make ahead breakfast and for my kids’ lunchboxes.
- Blueberry Oatmeal Muffins. This is my favorite blueberry muffin recipe! The oats make them extra hearty and they’re perfect for a grab and go breakfast.
- Blender Banana Muffins. I make the batter for these gluten-free, dairy-free muffins in a blender and it couldn’t be easier. They have a texture that’s somewhat similar to a baked oatmeal, which we love!
- Breakfast Casserole. I make this breakfast casserole when I want a morning meal that’s especially hearty and filling. You can store the baked casserole in the refrigerator for up to 4 days, or freeze individual slices to reheat later on.
- Frittata. My frittata recipe is made with eggs, sautรฉed vegetables and cheese. This is my favorite combination of ingredients, but this recipe is so easy to customize!
- Vegetarian Egg Casserole. Here’s another option for a make ahead breakfast casserole. This vegetarian egg bake has lots of flavor thanks to pepper jack cheese, potatoes, onion and spinach.
- Egg Muffins. I’ve been loving this egg muffin recipe so much lately! This make ahead breakfast is ideal for busy mornings, since all you have to do is reheat a couple of these quickly in the microwave. With feta and veggies, they’re absolutely delicious!
- Ham and Cheese Mini Frittatas. I add quinoa to the egg mixture for these mini frittatas to make them more filling. One lovely reader said, “Made these this morning and everyone, including my 17 month old loves them!”
- Hard Boiled Eggs. After years of trial and error, I finally cracked the code on how to make perfect easy peel hard boiled eggs. I love hard boiled eggs for a grab and go breakfast, paired with a muffin or fruit and cheese.
- Baked Oatmeal. This baked oatmeal is one of my favorite comforting breakfasts. To reheat it from the fridge, I add a slice to a bowl, pour on a little milk, then reheat in the microwave until it’s warm.
- Homemade Granola. Almost every week, I make a batch of homemade granola for my family to eat throughout the week. My favorite way to serve it is on top of plain Greek yogurt with fresh berries.
- Peanut Butter Granola. This recipe has been a favorite since I first shared it back in 2018. One reader said, “We make this granola all the time and absolutely love it! So simple and delicious!”
- Oatmeal Pancakes. Made with old-fashioned oats, whole wheat flour, Greek yogurt and cinnamon, these delicious oatmeal pancakes keep well in the freezer for busy mornings.
- Healthy Pancakes. My family loves these pancakes and I love that they’re on the healthier side. I always make a double batch to freeze for make ahead breakfasts on school mornings.
- Waffle Recipe. Surprised that waffles make my list of make ahead breakfast favorites? Don’t be! I store extra waffles from Sunday breakfast in the freezer, then thaw them on low power in the microwave. Then I put them in the toaster to crisp them up again. Yum!
- Healthy Banana Bread. This soft banana bread is the perfect grab and go breakfast. It’s moist and full of rich banana flavor.
- Carrot Cake Breakfast Cookies. I’ve packed these breakfast cookies with ingredients like oats, carrot, apple and flaxseed. They’re slightly sweet thanks to applesauce and pure maple syrup or honey and so delicious!
